<h3 class="wp-block-heading">簡介</h3>



<p id="cd4a">主廚萩原貴幸曾在滋賀縣的傳奇料亭招福樓修業，返鄉接手父親的餐廳後，一步步蛻變為名店，吸引各地饕客不遠千里前來。目前Tabelog分數高達4.57，名列全日本第16名。</p>



<p id="beda">這種餐廳等級的餐廳許多只接熟客，或是極難訂位。柚木元可能位處偏遠，訂位並不困難，價格也沒到東京天價。居然還願意接小孩！也是Tabelog金獎餐廳裡唯一能帶小孩用餐的。</p>

<p id="d6f4">野味的日文寫作「ジビエ」，來自法文的「gibier」。日本食用野味有悠久歷史，天武天皇於 675 年頒佈禁肉令，禁吃五畜(牛、馬、雞、猴、狗)，但山豬、鹿、熊、兔這類野味不在此限，在農閒的冬季，成爲另一個熱量的來源。</p>



<p id="d838">飯田被群山環繞，柚木元的野味全部來自當地獵人，除了常見的鹿、山豬、鴨，甚至還有熊、獾，簡直大開眼界。</p>

<p id="16af">烤鹿舌配蘑菇醬，熟度很理想，口感比牛舌更嫩一點，但還是頗韌，蘑菇醬當然也是附近山上的野菇製成。</p>

<p id="8a5d">大開眼界的鴨料理，鴨肉烤炙熟度完美，鴨漢堡排加入心臟與砂肝，口感豐富。醬汁以鴨內臟與鴨骨熬煮，可說把鴨用到淋漓盡致。佐綠蘿蔔泥、菠菜、黃色胡蘿蔔，蔬菜中和了肉的油膩感，很豐富的一道，各元素都處理得很好。</p>

<p id="841d">重頭戲來了，熊掌！</p>



<p id="5813">訂位的時候，就問要不要先加點「くまのて」，我想了一下才意會過來，啊！是「熊の手」！</p>



<p id="6326">熊肉有吃過，熊掌還真的沒有，「不然就先點一份吧！」既好奇又覺得害怕。</p>

<p id="5d85">燉熊掌本人真的有點怵目，燉得熟爛的肉淺淺包覆隱約可見的一節節掌骨，直覺想到兇案的斷掌。末端銳利的熊爪一摸，好尖！果然是一掌就能把樹皮刮下的驚人武器。</p>

<p id="23dc">店家貼心幫我們分成四份，剛好熊掌就是四指。沒有太多肉，都是皮與膠質，口感像豬腳。</p>



<p id="23dc">我問仲居這裡面有加中藥嗎？她說沒有，就只放了蔥薑蒜。彷彿自帶藥膳的悠長韻味，姑且稱為「熊味」吧，這大概就是熊掌最大的魅力 。 </p>



<p id="23dc">熊掌處理極費工，再加上一隻熊就只有⋯⋯兩隻手，是可遇不可求的稀有料理。愛吃豬腳的父親吃得十分盡興，膠質的口感我沒這麼愛，但依舊是難忘的體驗。</p>

<p id="9891">主廚現身，親自為我們料理熊鍋。熊骨湯涮熊脂與大蔥，來自熊的肥肚，乍看之下這也太肥！根本沒有肉只有脂肪。</p>

<p id="0921">意外的是，吃起來絲毫不油膩，也無腥味，只有淡淡油脂香氣的清甜，正好配上大蔥，簡單而美味。</p>



<p id="b6af">順帶一提，這熊是被稱為月輪熊（ツキノワグマ）的亞洲黑熊，胸口是一彎新月，台灣黑熊的近親，主要分布在本州，北海道的則多為棕熊。</p>

<p id="0d21">熊鍋可以加入長野木曾地方獨有的醃漬物「すんき漬け」來轉味。這是蕪菁葉完全不加任何鹽，只加入一點去年的すんき作為酵種，進行乳酸發酵的醃菜，風味獨特。</p>



<p id="4c9e">但我覺得不加比較好吃，對不起了，木曾地區的鄉親。</p>

<p id="f697">最後當然要來個「食事」把你餵飽。鴨肉釜飯，裡面搭配水芹（セリ）。很不野味，接受度高，水芹獨有的香氣介於蔬菜與香草之間，非常迷人。</p>

<p id="a121">以為要結束了，想不到還有小驚喜。問我們要不要再來點<strong>山豬拉麵</strong>或是<strong>熊咖哩</strong>。哎呀那剛剛上釜飯幹嘛呢？</p>



<p id="7072">雖然已經八九分飽，還是要撐著說：「我全都要！」</p>

<p id="c028">小驚喜有點厲害，以山豬高湯做成的醬油拉麵，叉燒當然也是山豬肉，湯很厲害，不輸拉麵名店。</p>

<p id="9898">香氣迸發的香料咖哩，配上蕃茄基底的酸鮮，若不說不知道是熊肉。肚子幾乎已經快塞不下，還是把咖哩扒完，實在好吃！</p>

<p id="69c0">懷石料理的甜點通常比較簡單，在地的檸檬做成果凍，底下是牛奶的慕斯。這是檸檬與橘子交種，香而不酸，帶微微的甜味，為味道厚重的野味大餐畫下清爽的收尾。</p>

<p id="1273">這次點了兩套wine pairing，一套葡萄酒、一套清酒，酒款都來自長野縣。雖然地酒配地食是黃金準則，但我覺得日本有點太走火入魔，與其執著於一定要選用在地款，拉開範圍以風味來搭配可能有更好的組合。覺得pairing差強人意，推薦點個單杯或啤酒就好。</p>

<p id="8112">用餐空間全部為包廂，少了板前的臨場感。可以帶小孩，也會幫小孩準備兒童餐。</p>



<p id="a2f4">可於OMAKASE網路訂位，但只限一兩個月後，直接打電話可以訂更久之後的位子，英文略通。可能真的太偏遠，訂位非常容易。</p>



<p id="ecb2">萩原主廚非常客氣謙和，毫無名廚的架子。他親自幫我們結帳，還特別說：「歡迎秋天再來這邊享用松茸，這裡的松茸是日本第一喔！」</p>



<p id="ecb2">松茸是日本秋季最具代表性的高級食材，長野的產量占了全日本的三分之二。</p>

<p id="59c4">「那⋯⋯應該很貴吧？」我忍不住好奇問。</p>



<p id="848a">主廚露出有點為難的微笑：「嗯～真的有點貴，一個人大概十萬。」</p>
